Caprese Pasta

We LOVE the Caprese Salad. So why not turn it into a pasta? Here’s what we did:

Boil the pasta (we used fresh Fettuccine noodles which only take about 1-3 minutes).

Oh, and our disclaimer is when we create simple dishes like this, we don’t measure. We eyeball everything depending on how many people we are serving.

In a large bowl combine the following:

  • Tomatoes (preferably from your garden or the greenhouse grown ones for maximum flavour)
  • Roughly Torn Fresh Basil
  • Bocconcini Or Mozzarella Cheese
  • Finely Chopped Greens (we used kale & spinach)
  • Crushed Garlic
  • Olive Oil
  • Pink Himalayan Salt

Add the cooked pasta

Top with fresh grated parmesan cheese and black pepper

Serve warm or room temperature
