Caprese Pasta
We LOVE the Caprese Salad. So why not turn it into a pasta? Here’s what we did:
Boil the pasta (we used fresh Fettuccine noodles which only take about 1-3 minutes).
Oh, and our disclaimer is when we create simple dishes like this, we don’t measure. We eyeball everything depending on how many people we are serving.
In a large bowl combine the following:
- Tomatoes (preferably from your garden or the greenhouse grown ones for maximum flavour)
- Roughly Torn Fresh Basil
- Bocconcini Or Mozzarella Cheese
- Finely Chopped Greens (we used kale & spinach)
- Crushed Garlic
- Olive Oil
- Pink Himalayan Salt
Add the cooked pasta
Top with fresh grated parmesan cheese and black pepper
Serve warm or room temperature
